White Wine Watermelon Cooler

A few weeks ago I brought home a watermelon from the grocery store with the intention of chunking it up for a snack. I set it proudly on the edge of the counter, turned to put away the rest of the groceries and it rolled right off the counter and exploded on the floor. I announced to the dismembered fruit that we would be having watermelon balls, scooped up the pieces and mopped the floor… Twice.

Jump to present day where half the busted watermelon is still sitting in my fridge on a sheet pan, its deformed face stared at me everytime I opened the door, and I had no idea what to do with it. Scrolling through the google I discovered watermelon cocktails. After some research, I decided the best way to tackle the watermelon was by blending and straining. Fifteen minutes and another mopping of the floor later I had three mason jars full of the prettiest watermelon juice.

A trip to the liquor store turned up Midori, which is a very green melon liqueur. The first try at layering the green and red was a bust. The second try was an accidental success! Not only will this cocktail “wow” your guests, it’s a great way to use up extra watermelon! See the directions below for the making and layering of the drink (hint: it involves when you put the ice in!) and you too can have this delightful, refreshing cocktail to sip on all summer long.

White Wine Watermelon Cooler

Difficulty: Easy

Yield: 6 Servings
Prep Time: 15 min
Cook Time: 0 min

Ingredients:

  • ½ Medium Sized Watermelon
  • 1 Bottle White Wine
  • 6 oz Midori
  • 18 Fresh Basil Leaves plus more for garnish
  • 1 Lime
  • Ice

Directions:

Scrape the watermelon out of the rind and puree in batches in a food processor or a blender then strain, you may have to stir the juice in the strainer to get it all out.

Cut the Lime into six wedges.

In a wine glass add 1oz Midori and three basil leaves, then muddle until fragrant.

Add ice almost to the top of the cup, then pour in ¼ Cup watermelon juice. Top with white wine and squeeze a lime wedge into the drink.

Garnish with fresh basil leaves and serve!
